Tomorrow the Fud Truk will debut at Lehigh University, ending a valley-wide dry spell of new food trucks. Unfortunately the truck is a Lehigh-only entity, but it’ still exciting to see something that’s a national trend finally take hold in the Lehigh Valley.
The only other food truck (to our knowledge) in the area is the Fat Boys House of BBQ truck that parks outside of the Iron Pigs stadium dishing out smoked meats in warmer weather. With people lining up for an hour to get food truck tacos, food truck festivals, and even a food truck reality TV show, it’s a wonder there’s not more trucks in our area.
The Fud Truk is an operation of Lehigh University’s Dining Services, managed through national company Sodexo. Last year Sodexho teamed up with celebrity chef Mai Pham and UC Davis to open the Star Ginger Asian Grille and Noodle Bar food truck. Lehigh University student publication The Brown & White reports that according to Karrine Dieser, marketing director for Lehigh’s dining services, the truck will feature a wide variety of meals ranging from pizza to burgers to salads to ethnic cuisine.
Not only are they offering breakfast and lunch items, it appears they may be toting some late night options as well. In typical food truck fashion, the crew will be tweeting their locations throughout each day. To start off it looks like the menu will include things like omelets, bacon, breakfast sandwiches, berries, and granola for breakfast. Lunch items will be along the lines of panini, wraps, and salads. The truck does accept both cash and credit cards.
Hopefully this new truck will inspire some more entrepreneurs to use the food truck as a culinary outlet and one day we’ll be toting our own food truck festival. In the mean time, watch the Fud Truk’s Twitter and Facebook for its location and special menu items.
